Sultana raisins are Turkey's flagship dried-vine-fruit export, produced from the seedless Sultana (Sultaniye) grape grown across the Aegean around Manisa, Salihli, Alaşehir and Sarıgöl. Turkey is the world's largest producer and exporter of sultanas, and the region's hot, dry summers and calcareous soils give a plump, sweet, light-amber raisin that sets the global quality standard.
The fruit is dip-dried — briefly dipped in a food-grade potassium-carbonate emulsion before sun-drying — which speeds drying and produces the bright, uniform colour buyers associate with premium sultanas. Sultanas are traded on a numeric scale, commonly No.7 through No.11, where higher numbers denote larger, lighter and cleaner fruit, letting buyers match grade to application and price point.
